High technology in the Centre of Excellence for Citrus
Döhler's citrus flavours come from Brazil – the land of oranges and lemons. Physical processes such as distillation and extraction allow the volatile, sensitive flavour raw ingredients to be gently isolated from the fruit as a whole. In the latest modern facilities at the Centre of Excellence for Citrus in Limeira, Döhler processes water phases and oils from citrus fruits into high-quality extracts, which can then be further processed into fractions and isolates. This allows the manufacture of From The Named Fruit (FTNF) products – which cover the entire range of flavour elements including individual flavour components.
The DöhlerGroup's portfolio of natural flavour extracts stretches all the way from orange, mandarin, lime and lemon through to exotic fruits such as pineapple and guava. It also includes local fruits such as apple, cherry and redcurrants. Depending on the product type, the fruit extracts can be used directly as FTNJ flavours or for the composition of FTNF and FTNJ flavours. FTNJ flavours (From The Named Juice) can be gained 100% from the juice of the fruit. They are used later to reinfuse flavour into fruit juices.
Highly-Concentrated Water Phases Make New Standards Possible
The DöhlerGroup also gains apple and red fruit flavours directly at the source. In Germany, Poland, Ukraine, China and Turkey, we produce apple juice concentrates and apple water phases from fresh fruit. Depending on the origin and harvest time, the flavour components of the water phases at the usual commercial concentration level of 150-fold can vary greatly. However, through advanced technology and gentle processing, Döhler can manufacture water phases with a concentration of up to 15,000-fold. This means that individual flavour profiles can often be reproduced, and products can be tailored to very specific beverage requirements.
The result: Water phases from citrus fruits, apples and red fruits – and those are just a few of the fruits possible– have technological advantages thanks to their high level of concentration. They are more stable and can therefore be preserved for longer. Döhler guarantees its customers that individual batches feature a consistently high quality. In addition, the transportation of highly-concentrated water phases is significantly more cost-effective.
