“Better for you” products

If, for example, a product’s sugar, fat or alcohol content is to be reduced or completely replaced as part of recipe optimisation, this often leads to significant changes in taste, mouthfeel and appearance. We then identify which of these variants is closest to the original on a sensory level and would be received just as well by consumers.
